With serene rooftop views and an atmosphere designed to evoke calm and connection, the setting mirrors the philosophy at the heart of the initiative: living gently and intentionally.

At the core of this experience is a plant-based menu that champions the idea of using ingredients in their entirety, reducing waste while elevating flavour. Conceptualized by Executive Sous Chef Sunil Rai and his team, the menu is both inventive and rooted in sustainability. Guests are welcomed with pumpkin hummus paired with vegetable skin crisps and a millet falafel bite—an opening that sets the tone for what follows.

The journey continues with a trio of sustainable mezze, including beetroot hummus, baba ganoush, and green pea labneh, each dish highlighting the versatility of humble, locally sourced ingredients. Comforting elements like a delicate spinach broth and Arabic lentil shorba offer warmth, leading into handcrafted mezze such as vegetable sambousek and spinach fatayer.

The main course presents a creative exploration of textures and flavours, from innovative cauliflower preparations to a rich, plant-based tofu au vin that reimagines classic culinary techniques through a sustainable lens. The meal concludes on a nuanced sweet note with black rice pudding and a millet-based date and almond basbousa—desserts that are both indulgent and conscious.

Complementing the culinary offerings is a selection of sustainable cocktails, including the refreshing Carrot & Lemongrass Highball and the Earthy Garden Cocktail, crafted using fresh, in-house ingredients with minimal waste practices.

Adding intellectual depth to the evening, environmental consultant Suyash Mishra will share insights drawn from nearly two decades of experience in environmental health risk, remediation, and nature regeneration. His presence reinforces the evening’s larger purpose—bridging awareness with action.
