California Walnut Barfi-Chef Sabyasachi Gorai
Ingredients: 1 cup California walnuts, ¼ cup milk, 250 g khoya or mawa, ¼ cup Sugar, 1 tablespoon ghee/clarified butter + a little extra for greasing, ½ teaspoon cardamom powder
Preparation
- Take ½ cup of California walnuts in a bowl.
- To this add ¼ cup of milk and let it soak for 1 hour. Thereafter, blend it into a coarse puree.
- Heat 1 tablespoon of ghee in a pan and add the remaining walnuts. Sauté till golden, drain and set aside.
- Now in the same ghee, add khoya and sugar and mix well. To this add the walnut puree and mix again.
- Keep cooking this till it gets thick and leaves the sides.
- Then add cardamom powder and fried walnuts and mix well.
- Spread this on a greased plate and let it set for a few hours.
- Slice into pieces and garnish with California walnuts.
California Walnut Cocktail Samosa with Tamarind and Coriander Chutney – Chef Sabyasachi Gorai
Ingredients: ½ cup maida/all-purpose flour, ½ cup wheat flour, Salt to taste, ½ tablespoon oil, 2 teaspoon sugar, Water as required
For the stuffing: 2 teaspoons oil, ½ teaspoon coriander seeds, ½ tablespoon ginger garlic paste, 1 green chilli, 1 onion, ¼ cup peas, ½ cup chopped California walnuts, ½ teaspoon red chilli powder, Salt to taste, ¼ teaspoon garam masala, ¼ cup coriander leaves chopped, ½ teaspoon amchur/mango powder, 2 boiled potatoes
Preparations
- For the stuffing, heat oil in a pan and add coriander seeds.
- To this add onion, ginger garlic paste, chilli and sauté well.
- Add peas and chopped California walnuts.
- Add boiled potatoes followed by all the spices. Mix and cook until well done.
- Once cooked, keep aside in a bowl and let it cool.
For the samosas
- Put flour, wheat flour, sugar and salt in a bowl. To this add oil and knead well with water.
- Take a small portion of the dough and roll into a thin circular sheet.
- Using a knife, divide the circle into two halves.
- Fold the ends to form a perfect triangle shape and fill the stuffing into it. Close the ends to prevent the stuffing from coming out.
- Heat oil in a pan and deep-fry these until golden brown.
- Serve with tamarind and coriander chutney.
Mango Walnut Sheera– By Chef Sanjyot Keer
Ingredients: 3/4 cup ghee, 3/4 cup semolina,1/4 cup wheat flour, 3/4 cup sugar, 1/2 cup Mango puree, 2 cups water (you can add more if the sheera is too dry), 1/2 cup California Walnuts
Preparations
- Chop California Walnuts and toast them into a pan, do not overdo it.
- Puree the mangoes to get mango pulp if using fresh mangoes.
- Add ghee, semolina and wheat flour in a pan and start roasting on medium flame.
- Keep roasting and stirring until the colour starts to change and you get a nice aroma.
- Now add sugar and mango pulp and stir quickly. While mixing continuously add the water too.
- Keep stirring to avoid lumps and add the toasted California Walnuts.
- Cool until the ghee separates.
- Serve immediately!
Gulaab Ki Phirni – Chef Varun Inamdar
Ingredients: 1/4 cup basmati rice, 4 cups California walnut milk, 1/4 cup sugar, 3 tablespoons rose syrup
Garnish: Few fresh rose petals, California walnut halves
Preparation:
- Soak the rice in water for half an hour. Drain water and pulse in a grinder till you get a grainy textured paste.
- Bring the California walnut milk to a gentle simmer for 10 minutes. It shall also reduce and thicken slightly.
- Add the rice paste while whisking continuously. This will help avoid lumps.
- Bring this to a boil while whisking, and then lower the flame to a simmer. Keep stirring the mixture every couple of minutes till about 15 minutes.
- Add sugar and mix till it dissolves. Switch off the flame and divide the mixture into two parts.
- Mix rose syrup in one part and let the other one the way it is.
- Transfer into earthen pots and ripple both mixtures slightly.
- Place a California walnut half and some rose petals on top of the phirni.
- Cool in the refrigerator for at least 2-3 hours or overnight.
- Serve cold.
California Walnut Rasmalai – Chef Varun Inamdar
Ingredients:
For the chenna
8 cups full cream milk
1/4 cup lemon Juice
1/4 cup water
For the California walnut milk syrup
2 ½ cups California walnut milk
3 tablespoons of milk powder
1/3 cup sugar
A few drops of yellow food-grade colour
Garnish
1/8 teaspoon saffron strands
1/2 teaspoon cardamom powder
A handful of California walnuts, chopped roughly
For the sugar syrup
3 cups of water
1 cup Sugar
Preparation
For the chenna
- Boil milk in a heavy bottom pan.
- When it boils, add in lemon juice and water mixed together. Stir and turn the flame off.
- Strain the curdled milk using a muslin cloth and wash the milk solids under running tap water. Keep aside till they cool.
- With the heel of your palm massage, the washed curd for 15 minutes till it is shiny and smooth. Divide into 12 balls.
- Roll them and flatten them.
For the syrup
- Heat sugar and water together till they start boiling, in a heavy-bottomed vessel.
- Drop in the chenna balls. Cover with a lid and allow it to roll boil for 15 minutes.
- Switch the flame off and allow the syrup and chenna to come down to room temperature.
For the California walnut milk syrup
- In a heavy-bottomed pan, add California walnut milk and bring it to a boil. Add in sugar, yellow colour and milk powder. Once the sugar is dissolved, switch the flame off.
Assembly
- Take the poached balls, press them and drain the syrup off. Transfer into the flavored California walnut milk. Garnish with saffron strands, and crushed California walnuts. Serve chilled.

No-Bake Vegan California Walnut Chocolate Brownie – By Chef Sanjyot Keer
Ingredients:
1 cup California Walnuts, 1 cup pitted dates, 6 tablespoons cocoa powder, A pinch of salt
1/4 cup roasted California Walnut chunks
Preparation:
- Chop the dates into smaller pieces so that it is easy to grind them. Alternatively, soak them in boiling water if they are extra firm.
- In a mixer grinder add one-cup California Walnuts, cocoa powder and a pinch of salt and give it a blitz until you get a powder-like consistency.
- Add the dates and grind well to combine everything. Add warm water if it is getting difficult to grind the mixture.
- Transfer this crumbly dough into a mixing bowl and add chopped roasted California walnut chunks.
- Turn mixture on a parchment paper or a plate and spread it into a large square. Cut into pieces and garnish it with some California Walnuts. You can also make vegan chocolate ganache with coconut oil and cocoa powder and top it up on your brownies.
- Chill the brownies in the fridge and serve.
California Walnut Raspberry Chocolate Tartlets – Chef Sabyasachi Gorai
Ingredients: 1 cup coarsely chopped California walnuts, toasted, 1 cup puffed brown rice cereal, 120g dark chocolate, melted, 36 fresh raspberries, 6 sprigs of mint
Preparations
- Arrange six cupcake papers on a baking sheet or in a muffin pan; set aside.
- In a large bowl, combine the walnuts and rice cereal; mix well. Add the melted chocolate and stir until all is well coated.
- Divide evenly among the 6 paper-lined cups and press gently with the back of a soup spoon to compact into a “crust”.
- Arrange 6 raspberries on top gently pressing them into position while the chocolate is still warm. Garnish with a sprig of the mint.
- Refrigerate until firm, about 30 minutes.
- Remove from the paper liners and place on a serving platter or individual serving plates.
- Can be made ahead of time and stored in the refrigerator for up to 36 hours.
Walnut Raspberry Chocolate Tartlets
Dark Chocolate Pumpkin California Walnut Oat Pudding- By Deeba Rajpal
Ingredients: 250ml low-fat cream {20%}, 75g pumpkin puree, 1 teaspoon cinnamon powder, 30g cocoa powder 40g quick-cooking oats
150g: 52% dark couverture chocolate chopped
75g brown sugar
50g honey
75g roasted California walnuts chopped
Topping
Roasted California walnut halves, persimmon slices
Organic rose petals
Preparations
- Place all ingredients, except California walnuts, in a heavy bottom pan and simmer over low heat, stirring constantly until it begins to thicken.
2. Once it becomes as thick as custard, take off heat, allow it to cool.
3. Stir in the chopped California walnuts.
4. Allow to cool, then ladle into serving glasses, bowls and chill for 2-3 hours, or overnight.
5. Top with roasted California walnuts halves, fresh fruits like figs, persimmons, candied pumpkin or seasonal fruits of your choice. Sprinkle over a few organic rose petals or pomegranate pearls for a pop of colour.

Ingredients: 1 cup seasonal fruits, cut into squares, 1 cup seasonal vegetables cut into squares, 1/4 cup black-eyed peas, boiled, 1/2 cup California walnuts, chopped roughly, 2 tablespoons fresh pomegranate seeds, Salt to taste, 1 tablespoon chaat masala, 1/2 teaspoon red chilli powder, 1 tablespoon lemon juice
Preparation
- Place all the fruits and vegetables in serving plate. Squeeze the lemon juice and sprinkle salt, red chilli powder and chaat masala.
- Add back eyed peas, pomegranate seeds, chopped California walnuts and mix.
- Serve immediately.
Goat Cheese, Griddled Cherry and Gremolata Toast – By Celebrity Chef Sabyasachi Gorai
Ingredients: Small bunch flat-leaf parsley, roughly chopped
Zest of 1 orange, 1 small clove of garlic, minced, 2 tablespoons extra virgin olive oil
A pinch of salt and pepper, 100g cherries, cut in half and destined, 8 slices of sourdough bread, 120g soft goats’ cheese, 60g California walnuts, toasted and roughly chopped
Preparations
- To make the gremolata, mix together the parsley, orange zest, garlic and extra virgin olive oil, and season to taste.
- Heat a griddle pan until searing hot, then place the cherries in cut side down. Sear for two minutes.
- Lightly toast the bread until golden brown and spread each slice with the goats’ cheese. Top each toast with the cherries and gremolata and finish with a sprinkle of walnuts to serve.
Grilled Peaches with Ricotta, California Walnuts and Honey – By Celebrity Chef Sabyasachi Gorai
Ingredients: Peaches (4 medium ripe peaches, halved, pit removed
1 teaspoon vegetable oil)
Assembly
1/2 cup ricotta
1/2 cup California walnuts
1/4 cup honey
4 fresh mint sprigs
Preparations
- Preheat oven to 180°C. Place walnuts on a baking sheet. Toast walnuts for 5 minutes. Remove from oven. Roughly chop when cool.
Peaches
1. Preheat grill to medium-high heat. Clean and lightly oil your grill. Brush each peach half with oil (or spray with cooking spray) on both sides.
2. Grill peaches cut down for 4-5 minutes until grill marks form. Flip with tongs and grill another 1-2 minutes until peaches are slightly tender. Remove peaches from grill and place on a large plate.
Assembly
1. To serve, place two peach halves on a plate or in a small bowl. Top each half with ricotta and chopped toasted walnuts. Drizzle with honey and garnish with mint. Serve warm.
