Kolkata’s appetite for global flavours finds a new address as Tess, the Euro-Asian bistro at Hyatt Centric Ballygunge Kolkata, rolls out The Kolkata Burger Exchange, a limited-period showcase of international burger styles reinterpreted for the city’s evolving palate.
Running from February 27 to March 7, 2026, between 11am and 11pm, the menu presents a cross-continental conversation — Turkey, Greece, Belgium, the Philippines, Hawaii and beyond — translated through refined plating, premium ingredients and chef-driven creativity. Each burger arrives as a complete plate, accompanied by signature sides and an in-house salad, elevating what is often casual fare into a composed dining experience.

A vegetarian passport
The vegetarian selection is expansive and imaginative. The Smokey Tempeh Burger layers black bean and walnut mash with avocado and crisp lettuce, balancing earthiness with freshness. The Turkish Lentil Burger draws on Middle Eastern notes — a crisp falafel patty paired with hummus and fried garlic.
The Cemita, rich with avocado, cheese, jalapeño and cilantro in a soft brioche, leans indulgent, while Belgium’s famed street sandwich inspires The Mitraillette — here interpreted with a beet patty, mashed vegetable potato, caramelised onion and mustard tucked into a sesame baguette. The BBQ Tofu Burger, served in a striking charcoal bun with Indian spice mayo and sweet potato mash, rounds off the line-up with a nod to local seasoning.
From Manila to Mykonos
On the non-vegetarian front, the Filipino Chori Burger pairs a robust chorizo patty with papaya slaw and barbecue sauce for sweet-smoky contrast. The Fried Chicken Burger keeps things comfort-forward with crisp chicken, jalapeño and garlic mayo aioli.
The Gyro Burger channels Mediterranean flavours — lamb seasoned with aromatic spices, offset by tzatziki and feta — while the Hawaiian Shrimp Burger plays with sweet and savoury through grilled shrimps, pineapple and cheddar. The nostalgic Ramly Burger, layered with a tuna patty, boiled egg and cocktail sauce, brings Southeast Asian street sensibility into a plated format.
