Hyatt Centric Ballygunge Kolkata is set to transport guests straight to the heart of Gujarat with ‘YAYAvar Journeys to Gujarat’—a specially curated food festival at YAYAvar, running from August 22nd to 24th.
The three-day celebration, curated by Home Chef Shachi Jain, brings alive the spirit of Gujarat with a traditional thali that is as rich in heritage as it is in flavour. More than just a meal, it’s a sensory journey through the state’s diverse culinary landscape, presented with warmth and authenticity.
The experience begins with a refreshing glass of Chaas, setting the tone for what follows: an indulgent spread of authentic farsan served with chutneys and sambharo. Expect favourites such as Handvo, Khatta Dhokla, Methi na Gota, Moringa Leaves Muthia, and Khandvi Bites, each crafted with traditional techniques and local ingredients.
The main course is a feast in itself, featuring a vibrant medley of dishes including Gujarati Kadhi, Akha Mag, Gwar Dhokli, Rasiya Muthia, Sev Tindoda (Kundru), Sev Tamatar, Lasuniya Bateka, Bharela Ringan Bateka, and Dahi Vada. Freshly made Methi Thepla and Rotli pair beautifully with rice and khichdi, while accompaniments like kachumber, papad, and pickle complete the ensemble.
No Gujarati thali is ever complete without something sweet, and here, the classics shine—Kesar Shrikhand and Basundi, each a decadent finale to the soulful spread.
What makes this festival truly special is its storytelling through food. By blending heritage recipes with timeless traditions, it goes beyond a dining experience, becoming a celebration of culture, nostalgia, and the culinary soul of Gujarat. Whether savoured as an all-day thali or indulged in as part of the elaborate evening buffet, every plate tells a story worth discovering.
